Dried grated coconut (desiccated coconut) is one of the utilization of palm fruits are widely used as raw material for making coconut bread. Utilization of the dryer is expected to improve the quantity and quality of the resulting product. The need for desiccated coconut varies widely, especially in a variety of particle sizes. The quality is indicated by the water content of desiccated coconut and resulted color. This study aims to analyze the quantity of coconut in the drying air temperature variations dryer with dryer and analyze the effect of coconut flake size on the rate of drying in the dryer in particle size variation. Coconut cleaned then shredded, chopped, and other variations and partially sprayed bisulfite. And then weighed as much as 250 gr for each variant and repetition.
